Quinoa Stuffed Roma Tomatoes

First off you can use all organics products for this. The only one I didn't have handy was the roma tomatoes.

INGREDIENTS
12 Roma Tomatoes - halved, seeded and placed upside down on a paper towel to remove moisture.
2 cups cooked organic Quinoa - follow instructions on box and allow to cool before adding any ingredients.

In the meantime

    3 organic grannysmith apples - finely chopped
    1/2 cup of organic dried raisins, blueberries or dates. All if you wish!
    1/3 cup mint leaves - fresh and finely chopped
    1/3 cup chives, fresh and finely chopped
    1 tsp of fresh cracked organic black pepper
    Zest and juice of one organic lemon
    1/2 cup organic extra virgin olive oil
    1/4 cup organic apple cider vinegar
    sea salt to taste
    1 cup organic Goats Cheese, crumbled

Allow the dressing to soak into the ingredients for about 10 minutes. Finally gently toss together with Quinoa and Fill cups.

Just an idea for a switch up. Use this filling to make a quiche or add fresh chopped spinach and seeds to make a tall fritatta, minus the tomatoes (tomatoes make for runny quiche).
